-preheat oven to 375 degrees.
-scrub a winter squash (e.g. acorn, butternut, etc)
-bake until it can be pierced easily with a toothpick (all the way through, not just through the rind)(basically until it's squishy enough to mash with a fork). this can take 30min-1hr, depending on the size & etc of the squash.
-when it's done, cut in halves, scoop out the seeds, peel, and mash in a bowl. (though peeling isn't necessary for acorn squash)
for every C of squash (approximately), add:
1 Tablespoon butter
1 teaspoon brown sugar
1/4 teaspoon salt
1/8 teaspoon ginger
a little warm cream or orange juice.
enjoy! it takes forever, but the actual time you'll spend worrying about it will be 15 minutes, tops.
and the ingredients are all likely to be in your pantry already, minus the squash which is easy to find and CHEAP.
